150 g broccoli florets (frozen works as well!) 100 g snap peas
1/3 leek
2 cloves garlic
3/4 cup green peas
3/4 cup corn
2 cups cooked brown rice
1 cup black beans
1/3 cup #kimchi
1/2 tbsp minced #ginger
3/4 lime, juice
2 tbsp #soysauce
1/2 tbsp maple syrup
1-2 tsp #sriracha (for those who like spice)
salt & pepper
To serve:
sweet chili sauce
avocado
Procedure
Heat the oil in a frying pan. Add sliced #broccoli and sautée for 2-3 minutes on medium-high heat. Then add chopped snap peas and thinly sliced leek. Sautée for another 2 minutes. Lower heat to medium-low, add garlic, peas, corn and a good pinch of salt and let cook for about 2 minutes while stirring.
Chop the kimchi in smaller pieces and add to the frying pan. Also add the pre-cooked rice, beans, minced ginger, #lime juice, soy sauce, and maple syrup. Let cook for a few minutes until hot and well incorporated, while constantly stirring. Season to taste with salt, pepper & sriracha.
Serve the warm fried rice with sweet chili sauce and avocado if you have that at hand.
