Ingredients

  • 6 dl / 2 + 1/4 cup rolled oats
  • 1,2 dl / 1/2 cup pumpkin seeds
  • 1 cup coconut chips
  • 3/4 dl / 1/3 cup sunflower seeds
  • 1,6 dl / 2/3 cup slivered or chopped almonds
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 3/4 dl / 1/3 cup coconut oil
  • 0,6 dl / 1/4 cup honey or maple syrup
  • 1/3 tsp vanilla
  • 1/3 tsp salt
  • 2 tbsp lingonberry powder (cranberry also works)
  • 3 tbsp water
  • 1,2 dl / 1/2 cup goji berries
  • 2,5 dl / 1 cup freeze-dried strawberries

Procedure

  1. Set oven to 160’C/320’F. Combine all dry ingredients from the first section above. Melt the wet ingredients along with salt and vanilla. Pour over the dry ingredients and stir to combine. Transfer to a baking tray lined with parchment paper and spread out. Toast in oven for about 15-25 minutes or until golden, stirring a few times.
  2. Whisk together lingonberry powder and water. Pour over the still warm granola and stir to combine.
  3. Let the granola cool, then add goji berries and crushed freeze-dried strawberries. Transfer to a pretty glass jar and enjoy with your favorite plant-based yogurt or milk.
